Chris' Italian Sandwich with Pickled Vegetables
Chef Chris' version of a classic Muffuletta

Instructions:


Dice up cauliflower, broccoli, bell peppers, and spicy peppers. Bring some vinegar, salt, and a little sugar to a boil. Pour it over the vegetables in a mason jar and refrigerate for a few days. On a soft potato roll, layer thinly sliced prosciutto, capicola, mortadella, and provolone. Add spicy mustard, and shredded lettuce with a little italian dressing. Top with pickled vegetables and a little salt and pepper.
