Carl's Pan Sauce Tips
Carl gives some great tips for making any pan sauce.

Instructions:
Don't use cast iron if using wine. If you want to add veggies, saute them first in the pan, adding fat if needed. Deglaze the pan with your favorite wine. Add stock if necessary. Whisk in chunks of unsalted butter while simmering sauce until thick (5 minutes). Good additions: stock, tomato paste, wine, garlic. Reduce and serve on the side.
