How to grill swordfish in foil packets on the beach

Instructions:


One of my favorite things to do is slip a small grill and a bag of charcoal in the back of my car and head to the beach to meet friends.

After a quick stop at the market, I buy aluminum foil, a jar of marinated artichoke hearts, butter, lemon, a bottle of white wine and swordfish. On the beach I light up the grill. Then tear off a large sheet of foil and fold it into a tent. Inside the tent I put the fish fillet or chunks in first, then add a half-stick of butter, a half lemon, artichoke hearts in their liquid, and a splash of white wine. I seal the top of the tent closed and steam it all on the grill for 20 minutes. Carefully open the packet, check to see if it’s done and serve it on paper plates. Sitting in the sand near the water, it’s dreamy. — Faith
