Carl's Cod Cakes
Carl makes amazing pan-fried cod cakes.

Preheat the oven to 350F. Bake cod filets (about 600g) on a parchment-lined baking sheet for 30 minutes or until cooked through. Remove from heat and drain all liquid. Pat dry with a paper towel. Mash fish with your hands in a bowl with lemon rind, parsley, mayo, egg yolk, and celery salt. Taste and adjust seasonings and flavors to your liking. Form the mash into four patties, compressing tightly. Cover with pork rinds on all sides, pushing pork rinds into the patty to ensure they stick. Pan fry in lard over medium heat for about 4 minutes per side. Serve with tartar sauce.
