Instructions:
You can use any kind of ribs. This time I used pork spare ribs. Flip the rack over so the underside is showing. Locate a flap of silver skin at the narrow end, and grab it using a paper towel. Carefully peel off as much of it as you can. Pat the ribs dry on both sides with paper towels. Combine salt, white pepper, and garlic powder in equal portions and sprinkle liberally on both sides. Fill a squirt bottle with water and apple cider vinnegar. You can use apple cider if you don't mind the fructose. Smoke for three hours over the lowest heat possible. My Traeger smoker has a 'Smoke' setting that generally ends up around 150F. Every 30 minutes, spray the ribs, flip them, and spray the other side. Repeat this process for the entire cook time. Preheat oven to 300F. Wrap the ribs once in butcher paper, and twice in foil. Set directly onto oven rack and cook for another 2-3 hours. Remove and serve with your favorite BBQ sauce.
