Chef Chris' Meat-Lover's Chili
How about a chili with bacon, beef, pork, and chorizo!

Instructions:


Brown bacon, cubes of beef and pork, and chorizo in a cast-iron skillet for 20-30 minutes. Remove from pan. Add chopped onions, peppers, and garlic to the pan and saute with a tablespoon of chili powder. Douse with Bourbon. Add a 12-ounce beer and a dash of Worchesterchire and soy sauce. Let simmer for at least an hour. Thicken with a small handful of corn meal and simmer for another 20 minutes. Serve with a wedge of lime.
