Instructions:
Carl's technique is exactly like Chris' except for the coating. Empty a bag of fried pork rinds into a food processor and process for about 30 seconds until pulverized. Add grated romano cheese and blend for a few seconds. Instead of flour, use a packet of Keto Chow Chicken Soup Mix (see link on show recipes page). Cutlets go into the egg wash, then into the soup mix, back into the egg wash, then into the pork rind mixture. For extra decadence use ghee in the cast-iron pan instead of oil. It's a game-changer.
