Instructions:


Pound chicken thighs thin and prepare with flour, egg wash, and seasoned bread crumbs. Heat about 1/4 inch of regular olive oil in a hot cast-iron to around 350 degrees. Fry on each side for about a couple minutes, and move to a cookie sheet or paper towels. Keep warm in oven at about 200F. Serve with a squeeze of lemon and your favorite sides.
