Carl's Smoked Rib Roast
Smoke it to 120F, then wrap it tight until it reaches mid-rare!

I pretty much follow the recipe but when it reaches 120, I take it out. I keep the thermometer probe in it, but I wrap it in foil, and then in a towel. I let it sit for a couple of hours, and the temp naturally rises to 130. It's amazeballs.
