Instructions:


Chop a whole head of cauliflower into small pieces. Roast in oven with olive oil and garlic at 400F until golden brown (about 40 minutes). Remove and allow to cool. Blend in a blender with an entire stick of butter and just enough cream to loosen it (not too much!). Salt and pepper to taste and serve hot!
