Joann Church's Leftover-Stuffed Quesadillas

Instructions:
Start with low-carb flour tortillas. Combine leftover ingredients (meats and veg) with a can of Rotelle diced tomatoes with green chilis in a fry pan and saute' until warm. Use Mexican Blend cheese. Fold over and cook in the oven on a cookie sheet with parchment paper until crispy. Serve with sour cream, salsa, and a wedge of lime.
