Carl's Turkey Skin Crackers

Use chicken skins or an entire turkey skin. Preheat oven to 350F. Spread out on a parchment paper on a cookie sheet. Season with salt and pepper. Place another sheet of parchment on top, then another cookie sheet. Place a weight on top (a coupele of cast iron pans, for example). Cook in the oven for 35 to 40 minutes. Allow to cool. Pat dry and cut into square crackers.
