Carl's Crispy Baked Chicken Skins
A great low-carb alternative to chips or even for sandwiches

Instructions:


You'll need two identically-sized baking sheets and parchment paper. Cover a baking sheet with parchment paper, lay down chicken skins and lightly salt both sides. Add another piece of parchment on top, and cover with the second baking sheet. Place a heavy cast-iron pan on top to really flatten the skins. Bake at 400F for 10-20 minutes or until they turn golden brown. You'll have to experiment with the time as you can easily overcook them and they will disintegrate when you try to pick them up. Carl uses them as chips and also as a sandwich bread substitute.
